Hand harvested and spontaneously fermented with native yeasts, it undergoes a 57 day maceration on the skins. Aged for 68 months in amphorae and concrete tanks, then bottled unfined, unfiltered, and with minimal added sulfur (<10 mg L). Cloudy, citrusy, and lightly tannic, it offers notes of clementine, lime, and a hint of
