2023 Domaine Pierre Guillemot Les Serpentieres, Savigny-les-Beaune Premier Cru, France Suertes del Marques Matthieu began his project inThis cuve is sourced from Les Serpentires, a steep, east facing premier cru with thin, stony clay limestone soils that give naturally firm structure and pronounced minerality. The domaine hand harvests the fruit, fully destems, and ferments with native yeasts in traditional open vats. Aging takes place in older barrels to maintain clarity of site expression, with gentle handling throughout and bottling carried out without fining.
